Cinnamon syrup is a versatile syrup to have in the fridge. If you love cinnamon you will find a myriad of ways to use it. From cocktails to coffee and pancakes to sweet potatoes, this cinnamon syrup is worth having on hand.
Manservant loves making cocktails. Not just simple cocktails, but ones that require simple syrups which means my fridge has several syrups on hand to be available as needed.
Needing to make some space in the fridge I came across this cinnamon syrup which I figured would be good on baked sweet potatoes.
I was not wrong.
After baking the potatoes and topping them with maple pepper butter, I drizzled on the spicy sweet syrup and was totally amazed.
Yes, these sweet potatoes are good.
To make Manservant totally swoon I tossed on some marshmallows and browned cornflakes and loved the contrasts of the ingredients.
Perfect for Thanksgiving, I felt I must share.

Cinnamon Stuff
Imagine the best cinnamon roll you've ever had. Now imagine it in liquid form. This sweet sugar syrup is enhanced with the flavor of cinnamon. And it is good. The warm spicy sweet flavor of the cinnamon truly shines!
I have seen many recommend only keeping the cinnamon syrup for two weeks. Unless you have contaminated the mason jar, simple syrup lasts for up to a year. It can even be frozen in an ice cube tray and thawed as needed.
Saigon cinnamon is a type of cassia cinnamon. It has a very strong cinnamon flavor which I prefer. I have not seen it in bark form but if you can find it, use it. If not use, whatever you can find but try to stay away from Ceylon cinnamon as cassia cinnamon has a stronger flavor which makes it better for flavoring.
Simple syrup is two parts water to 1 part sugar. It is simmered together to create a sugar syrup that can be used to sweeten cold drinks. Sugar, when stirred into cold drinks, settles at the bottom of the glass, whereas simple syrup blends right in! Simple syrup can be infused with many flavors-the possibilities are endless!
10 Ways to Use Simple Syrup with Cinnamon
Cocktails: This Alpine Frost cocktail contains cinnamon syrup. It's made a bit different than this recipe, but take your pick.
Pancakes or Waffles: Perfect on either but drizzled on this Apple Pancake would bring me to my knees. And gingerbread eggnog waffles sound pretty good, but even better with cinnamon syrup.
Next time I make these whiskey streusel sweet potatoes you bet I'm going to drench them with this sweet syrup.
Coffee or Tea: What a way to add sweetness! I love this liquid sweetner to sweeten my coffee with.
Fruit: Drizzle on a mango. Or an apple or pear. Or slices of fresh juicy pineapple.
Pumpkin Pie: Embellish your slice of pie with a drizzle of syrup.
French Toast: I have several recipes for French toast, but this one made with condensed milk would be amazing with cinnamon syrup.
Yogurt: What a great way to start the morning. Count me in with a yogurt bowl made with cinnamon syrup and bananas!
Oatmeal: Top a bowl of oatmeal with this rich syrup or even make baked oatmeal and gild the lily.
Ice Cream: Cinnamon syrup would be awesome spooned onto ice cream. Chocolate, coffee or vanilla anyone?

How To Make Cinnamon Syrup Recipe
Cinnamon syrup is just a flavorful simple syrup containing sugar, water and cinnamon.
It is considered a simple syrup because the ratio of water to sugar is 2:1 or 2 parts water and 1 part sugar.
Simple syrup is used in many cocktails.
There are so many infused simple syrups available but making your own cinnamon syrup is so easy.
As the water, sugar and cinnamon simmer, the mixture becomes syrupy and flavored with cinnamon.
This elixir can then be used to flavor most anything!
However if you aren't up for simmering sugar, water and cinnamon, Monin syrups are a pretty good choice-and I'm not being paid to say this!

Bonus: Sweet Potatoes Recipe
For mashed sweet potatoes: Bake the sweet potatoes and either mash with the cinnamon syrup and butter and top with marshmallows, if you must! Then broil or bake before serving.
I choose to bake the sweet potatoes and top them with maple black pepper butter and then drizzle with spicy cinnamon syrup.
How to Make Maple Black Pepper Butter:
Combine ½ c of very soft unsalted butter with 2-3 T maple syrup, 1 and ½ teaspoons of fresh ground, coarse black pepper and a few pinches of salt. Whisk together well or beat with a mixer if you must. Or use an immersion blender-a very handy tool.
After topping the sweet potatoes with the maple black pepper butter, add some marshmallows if you want, and to add crispiness I toasted some cornflakes (Rice Krispies are fine also) and sprinkled those on top.
Drizzle with cinnamon syrup and your mouth explodes.
I cut the potatoes into thirds and serve these as a side for Thanksgiving.
With mashed potatoes on the table in our home we don't eat as many sweet potatoes, but this gives everyone more than a few bites!

Description
There are many ways to use cinnamon syrup. From adding to coffee or tea, drizzling over ice cream and even sweet potatoes, you will love having this cinnamon simple syrup recipe in your refrigerator!
Ingredients
1 oz cassia cinnamon sticks broken into shards (3-4 sticks)
2 c water
2 c sugar or try using a combination of brown sugar and white sugar together for extra richness and flavor
½ t vanilla (optional)
Instructions
Cinnamon Syrup:
In a saucepan combine the three ingredients. Bring to a boil, stirring occasionally. Lower the heat, cover and simmer gently for 4 minutes. Remove from heat and let sit overnight. Strain through cheesecloth.
I then added back a cinnamon stick so the flavor keeps amping up! Store in a tightly sealed jar in the refrigerator.
