Lately our weekends have consisted of waking up, throwing on yard work clothes, and getting to work.
I miss making breakfast and leisurely reading the paper. But sometimes I make breakfast any way just to get us through to dinner.
At least that's the plan! Keep Manservant working until he can eat again, but about 3PM I always find him with the pita chips and peanut butter on the counter.

I actually looked for a Hong Kong French toast recipe but I wasn't feeling like I wanted to stand at the stove and fry French toast.
And besides Manservant is the peanut butter lover and I only like it sometimes.
Like in cookies!
So when I found this simple French toast recipe that didn't need to soak in the fridge overnight, and truly is thrown together in less than 15 minutes, I couldn't resist.
I got my shower and we both got breakfast!
Rich in flavor and so easy to make, this just might become my go-to French toast.
Forget standing at the stove and frying slices of bread!
French Toast Ingredients
It doesn't get much simpler than this!
Challah bread or brioche is my favorite type of French toast bread.
I often buy the Laromme challah at Kroger's and I adore their brioche bread.
No kidding-that stuff rocks!
Though the bread is the most important part of any French toast recipe, I do think the milk mixture is important also.
Condensed milk is key to adding rich flavor and avoids the extra step of adding sugar.
I love using heavy cream or half and half instead of 2% milk.
It makes this condensed milk French toast recipe so much richer.
Even with using condensed milk in this recipe, it still requires additional regular milk.
Don't drink dairy milk? Feel free to use what you like.
In any recipe here at TIHIC I always use large eggs. So if the eggs you use are smaller, try adding an extra egg.
Cinnamon and Vanilla extract adds additional flavor but don't be afraid to switch it up with almond extract or even rum!
Add a pinch of cardamom or even pumpkin pie spice. Just look in that spice cabinet and choose what sounds good for you!
Blueberries are ideal in French toast though I also love bananas and pineapple. Truthfully, if you have a favorite berry, don't be afraid to use it!

What To Serve With Easy French Toast Casserole
Besides maple syrup I love drizzling this with extra condensed milk. Buttermilk syrup from Uncle Bob's is so good and he also makes a coconut and a cinnamon syrup.
Blueberry syrup would also be good!
I made my brown sugar pepper bacon and baked it with the French toast. So good!
But these breakfast sausage patties are great also.
Fruit Salad or just melon wedges would round out your meal.
Of course you may have some condensed milk leftover so I'd add it to my coffee just like the Vietnamese do. Yummy!
Or make a small batch of Magic Bars. Double yummy!
But it is amazing in tres leches cake!

Description
This easy French toast casserole made with a custard of condensed milk and eggs with vanilla extract for flavoring, is amazingly delicious. Perfect for an easy brunch or breakfast!
Ingredients
8 oz brioche or challah
1 c condensed milk
1 c whole milk or ½ c milk and ½ c heavy cream
3 eggs
¾ t. cinnamon
Pinch of salt
2 t vanilla extract
1 cup fresh blueberries
Instructions
Preheat oven to 350 degrees. Grease a ceramic baking dish that is approximately 9" x 7" with butter.
In a medium sized mixing bowl beat together ½ condensed milk, eggs, cinnamon, salt and vanilla extract. Stir in the cubed or torn brioche or challah.
Pour into greased baking dish and top with 1 c of blueberries.
Bake 50-60 minutes or until a knife inserted comes out clean. Drizzle with more condensed milk and serve.
