When the kids were home to take Dad skiing I made these Crumbl chocolate cookies. However, making a copycat Crumbl cookie at home is a special treat for chocolate lovers.
After all, their visit always warrants cookies and Zoe's favorites always seem to be something in the chocolate cookie category.

Why I Love This Chocolate Chocolate Chip Cookie
The best part about this copycat Crumbl cookie, besides its awesome chocolate flavor, is that it requires no chilling.
That means you can satisfy your cookie monster urge pretty quick!
These chocolate drop cookies come together very fast and can even be made with a hand mixer.
Plus, the ingredients are all items you probably have on hand.
Well, at least I do!

What You Need
Standard cookie ingredients:
Butter - Salted or unsalted is fine.
Brown sugar - I always use dark because I love the molasses flavor, but if light is what you have, no problems there.
1 Egg - Room Temp or run it under warm water if it's straight from the fridge. It mixes in better that way!
Flour - I always use unbleached flour unless the recipe uses cake flour. It is less processed and makes for a chewier cookie, which is how I like my cookies. All purpose flour will produce a softer cookie. However, my guess is if you compared them side to side, you'd probably have to be an expert to tell them apart.
Dutch Process cocoa - This gives the cookies a darker color and a more mellow flavor. That being said-I use Trader Joes cocoa which is not Dutch processed and no one was the wiser.
Baking Soda and Salt - adds flavor and the soda allows the cookies to spread. In Colorado I use about half the amount called for.
Chocolate Chips - I used a combination of Ghirardelli dark chocolate chips and Nestles semi-sweet chips. So good!

I'll be honest. I've only had Crumble cookies once, but I have to say, they were very good! However at about $5 a cookie I'd rather make my own and have a few dozen! I can't tell you if this is the exact recipe, but Crumbl cookies are known for their thick, giant cookies with soft insides.
Crumbl cookies have so many flavors and they bring out new ones each month. Some of their flavors are quite fun, such as cornbread and Dubai, but the classic flavors such as milk chocolate chip and pink sugar cookies are supposed to be always available.
It seems every cook has a different answer! However to me it would be overmixing. That adds more air to the dough which makes for a tough cookie or it can cause the cookies to rise to much and then fall flat. STOP your mixer as soon as the flour is mixed in. And you can even add the chocolate chips while adding the flour, to avoid overmixing.
Storing Chocolate Crumbl Cookies
These drop cookies are easily stored in sealed Zip-lock bags at room temperature for up to a week. They stay moist and chewy for awhile! In fact, many people wonder how to store their copycat Crumbl cookie for maximum freshness.
Cookie dough can also be portioned and frozen in dough balls on a parchment lined cookie sheet and flash frozen in about 1-2 hours. Remove from baking sheet and place in an airtight container and bake when needed. They last 3-6 months in the freezer.
Don't forget to add about 2-3 minutes for extra baking time when baking frozen.
Also add the baking directions to the bag so you don't forget what temperature to bake at!
I also freeze cookies after baking, especially around the holiday time. That way I can pull them out and serve them quite quickly. The only drawback to this method is the cookie thief who steals them from the freezer, thereby decreasing the cookies I thought I had frozen.

If you love chocolate, I implore you to bake these chocolate cookies. Additionally, baking a copycat Crumbl cookie at home is easier than you might think.
This is about the easiest cookie recipe I've ever made, with little that can go wrong.
Cleanup is quick and can be done while the cookies are baking.

Dark Dream Copycat Crumbl Cookie

Description
This copycat Crumbl cookie is essentially a very chocolatey, double dark chocolate cookie. If you love chocolate and thick, chewy cookies with soft melty dark chocolate chips, well, this dark, dreamy cookie has you covered!
Ingredients
½ c butter
¾ c brown sugar
2 T sugar
1 large egg
2 t vanilla extract
1 ¼ c flour
½ c Dutch processed cocoa
½ t baking soda
¼ t salt
⅔ c semisweet chocolate chips
⅓ c semisweet chocolate chips for topping
Instructions
Preheat oven to 350. Line baking sheet with parchment.
Cream butter, brown sugar and sugar together until creamy. Beat in egg and vanilla extract until combined.
Add in flour, baking soda, cocoa powder and salt and mix until just combined. Add in ⅔ c of chocolate chips and fold in.
To Make Crumbl size: Scoop out 8 equally sized cookie dough balls and place on baking sheet. This is equivalent to about ¼ c per cookie. Top with more chocolate chips and gently flatten to about 1" thickness.
To Make Normal size: Scoop 1.5 T scoops onto cookie sheet to end up with about 24 cookies.
Bake in preheated oven for 10 minutes. Let cool on baking sheet for 10 minutes then transfer to cooling rack. Bake slightly less for smaller cookies.
Notes
Add a pinch of instant coffee granules to make the chocolate flavor shine!
