These simple flourless peanut butter cookies are made with a few simple ingredients and are an easy cookie recipe to make! Peanut Butter Oatmeal Chocolate Chip Cookies

I made these easy 4 ingredient peanut butter cookies for our lovely houseguest during Passover. 

I've made them since the kids were tots. 

Quick and easy and always fun to have in your back pocket whether made for a crowd, a school function or just when you have the need for a cookie during Passover! (Not that I haven't made some good Passover cookies!)

Manservant loves these cookies especially when he thinks he needs to cut carbs, because they have no flour.

These cookies with a load of peanut butter flavor may have less carbs but they are certainly not carb-less. I'll leave him to worry about the details!

You can make these peanut butter cookies with dark chocolate chips, milk chocolate chips or semisweet chocolate chips but that is up to you.

Why These 4 Ingredient Peanut Butter Cookies Are Amazing!

This peanut butter cookie recipe is perfect for kids to make.

No flour flying everywhere! And kids love the cookie dough taste.

I love that this sweet treat is easy to make and only requires a large bowl.

No need for getting my stand mixer out!

Very little clean-up, and great chewy peanut butter cookies!

Ingredients and Options for 4-Ingredient Peanut Butter Cookies

Sugar-Brown Sugar or Granulated Sugar can be used. Sometimes I use one cup of each. I have not tried coconut sugar.

Eggs at room temperature (I always use large eggs in my cookie recipes.)

Vanilla extract adds flavor but if you are out, I think these cookies will still be great!

Peanut Butter - I use crunchy peanut butter, but creamy peanut butter is fine, too!

Natural peanut butter can also be used. Just make sure it's well stirred before using it in cookie dough and that it contains salt.

Salt adds a lot of flavor to peanut butter.

If you mix these up and the dough seems too soft, just stick the cookie dough in the fridge for up to an hour.

Baking Soda? Not necessary, however if you desire a little puff, add a teaspoon of baking soda.

How To Jazz Up This Homemade Cookie

Want to add chocolate chips? Be my guest! Or peanut butter chips.

Or if you are using creamy peanut butter, add in some chopped peanuts.

Next time I think I'll add one a mini peanut butter cup to the top of the cookies before baking.

Feel free to roll the cookie dough balls in sugar before baking.

After cookies have cooled dip in melted chocolate if you aren't using chocolate chips; or even if you are!

There are so many fun ways to make this easy recipe.

How To Make 4 Ingredient Peanut Butter Cookies

Preheat oven to 350 and line a cookie sheet with parchment paper.

In a medium bowl mix the peanut butter and sugar until smooth.

Add the eggs, one at a time. Then add the vanilla, and baking soda if using. 

Roll cookie dough balls into the size of a walnut.

Place on prepared baking sheet. 

Press down cookie dough with the tines of a fork in a criss-cross pattern or just use the palm of your hand and gently press.

Bake 8 - 10 minutes until they are golden brown and then remove from oven.

(If you used brown sugar, they may not look golden brown.)

For best results let cool on the baking sheet, then remove and let cool completely on a wire rack.

These are the easiest peanut butter cookies I know of to make!

Store in an airtight container or a giant zip lock bag, but I promise they won't last long.

Why don't you need flour in peanut butter cookies?

Peanuts when ground up essentially make a "nut flour".
They also contain a lot of oil so you don't need butter.

Can honey peanut butter be used in this peanut butter cookie?

Absolutely. I've never tried it, but I hear they taste great.

What to Serve With the Best Peanut Butter Cookies

Well, I'm not sure you have to serve anything with this easy cookie, but a tall glass of cold milk is wonderful with these chewy cookies.

These also go great with a scoop of vanilla ice cream.

I love this very simple recipe that produces great cookies.

They were perfect during Passover!

I have no doubt you will love these special treats.

I threw them together at the last minute and my crew was happy I did.

Description

These easy peanut butter cookies with just 4 ingredients are soft and creamy and taste like peanut butter cookie dough-only better!


Ingredients

Units Scale

2 c peanut butter - creamy or crunchy

2 c sugar - brown or granulated or combination

2 large eggs at room temperature

1 t vanilla

1 t baking soda (optional)

1 c chocolate chips (optional)


Instructions

Preheat oven to 350. Line cookie sheet with parchment paper.

In a medium bowl mix the peanut butter with the sugar until smooth. You may use a hand held mixer if you prefer.

Add eggs, one at a time and the vanilla extract. Stir in baking soda if using.

Roll dough into walnut sized balls or use a cookie scoop. Press the tops of the cookies gently with a fork or the palm of your hand.

Bake for 8 - 10 minutes and remove from oven. Let cool for a few minutes before removing to a wire rack to cool completely.

    I love baking these cookies during Passover when I can't use flour. They have a cookie batter flavor after baking or even directly from the freezer and are so good!

      Optional means those ingredients are not necessary. There are 4 ingredients without those.
