It's high time I share this chocolate salami recipe. Just a few simple ingredients and this delicious no-bake chocolate salami, made to resemble a real salami log, will become the perfect dessert. Or snack or gift or just a rich chocolatey crunchy treat to have at tea time. Or break time. Well, you get the picture, right?
This chocolate salami recipe is popular in Italy. In Portugal. In Russia, In Israel.
It's high time it becomes more popular here.
The first time I ate it was in South Africa. The second time in Israel and the third time in my kitchen.
It's so easy to make I don't know why I haven't made this chocolate salami cookie more than once in 40 years!
But, it's never too late to change.
Just like I adore fudge, I adore this no-bake chocolate dessert.

Chocolate salami is a chocolate confection made with dry cookies and sometimes the addition of dried fruit, nuts and liqueur for flavor. I like to think of it as European fudge!
This confection has roots in Italy, and Portugal and there are variations of this all over the world. Everyone loves chocolate salami cake!
I make my chocolate salami recipe with cocoa powder. I've seen variations made with chocolate ganache using chocolate chips and heavy cream. Others with condensed milk. And, I've seen this made with raw egg yolks, but I think this recipe is a touch safer.

Chocolate Salami Ingredients
Sugar - Granulated sugar is called for in this recipe and though I haven't tried brown sugar, I think it would add a wonderful caramel flavor.
Cocoa - You can use natural or Dutch process cocoa to make this salami. I used Trader Joes cocoa which is not Dutch-processed. Use Dutch process cocoa in recipes that require baking powder. Use natural cocoa powder in recipes that require baking soda because it is more acidic. Dark chocolate salami requires neither baking soda or powder, so use your favorite cocoa.
Milk- Whole milk, skim milk, coconut milk, whatever your preference
Red Wine or Grape juice or even sherry, Marsala, Amaretto, Kahlua
Vanilla and Rum Extract - I like the addition of rum extract because I like rum and if serving during the holiday season it seems a bit more festive. But you do you! Almond extract is good and peppermint would be a fun choice too.
Butter - Salted butter, please.
Cookies - Use dry cookies such as vanilla wafers or other sweet crunchy biscuits such as gingersnaps, broken shortbreads, Marie biscuits, graham crackers, even animal crackers or Amaretti cookies.
Add nuts or dried fruits such as dried cherries or candied orange peels. Add the additions in place of the cookies, but make sure to use at least some of the cookies. Just think how pretty pistachios and dried cherries would be!
How To Make Chocolate Salami
In a medium sized heavy pot add the sugar, cocoa, milk, wine, vanilla and extracts. Heat over medium heat and bring to a boil.
Add the butter while off the heat and crumble in the cookies and nuts or fruit.
Line your work surface with a sheet of parchment paper or a piece of plastic wrap. Place chocolate cookie dough on top and form into a log. If dough is dry, like it is often here in Colorado, don't be afraid to add more liqueur or liquid to make it roll into a cylindrical shape.
After dough has chilled, roll in powdered sugar or flaked coconut, and tie with kitchen twine if you want this to resemble a real salami.

How To Serve and Store Chocolate Salami
Slice this chocolate salami into thin slices on a cutting board and serve at room temperature. Serve with a glass of liqueur for a lovely after dinner treat.
Store chocolate salami well wrapped in the refrigerator.
It will keep indefinitely as long as it is tightly wrapped, so it doesn't dry out.
This chocolate confection can also be frozen.

Description
Chocolate salami is such a fun confection to serve. Slice and place on a tray with cookies or coat with powdered sugar and tie with a string to ressemble a real salami. Either way this chocolate salami sure beats meat! Plus it makes a great gift and keeps well in the fridge!
Ingredients
1 c sugar
½ c cocoa
½ c milk
¼ c sweet red wine
1 t vanilla
1 t rum extract
4 ounces butter
18 ounces Vanilla wafers = 2 ¼ cups or 22 Vanilla wafers = 1 cup
Nuts or dried fruit - If using, make sure to keep the amount equal to 1 cup. I would suggest no more than 1 cup of additions and then 1 ¼ c of broken cookies.
Instructions
Mix sugar, cocoa, milk, wine, vanilla and extracts in saucepan over medium heat and bring to a boil.
Remove from heat and add butter, mixing well.
Crumble the cookies and add to chocolate mixture. Place dough on baking sheet lined with parchment paper. Form into log and roll in confectioners sugar-if using- and then place the chocolate log in plastic wrap. Chill in fridge for 3 -4 hours.
Slice into thin slices and serve.
