Description

Chocolate salami is such a fun confection to serve. Slice and place on a tray with cookies or coat with powdered sugar and tie with a string to ressemble a real salami. Either way this chocolate salami sure beats meat! Plus it makes a great gift and keeps well in the fridge!


Ingredients

Scale

1 c sugar

1/2 c cocoa

1/2 c milk

1/4 c sweet red wine

1 t vanilla

1 t rum extract

4 ounces butter

18 ounces Vanilla wafers = 2 1/4 cups or 22 Vanilla wafers = 1 cup

Nuts or dried fruit - If using, make sure to keep the amount equal to 1 cup. I would suggest no more than 1 cup of additions and then 1 1/4 c of broken cookies.


Instructions

Mix sugar, cocoa, milk, wine, vanilla and extracts in saucepan over medium heat and bring to a boil.

Remove from heat and add butter, mixing well.

Crumble the cookies and add to chocolate mixture. Place dough on baking sheet lined with parchment paper. Form into log and roll in confectioners sugar-if using- and then place the chocolate log in plastic wrap. Chill in fridge for 3 -4 hours.

Slice into thin slices and serve.
