With lots of matzo on hand I'm always looking for new matzo recipes. This matzo snack mix is so good, I thought I'd share. No matzo? Saltine crackers work just fine!
I have to admit to loving matzo.
When asked I always tell people that my matzo of preference is Yehuda. But Trader Joes is pretty good, too!
I keep a box on hand all year long because every now and then I feel like a slice of matzo and butter!
It was last year that I discovered this matzo snack recipe.
This addictive snack disappeared fast but the Brazil nuts stayed in the bowl.
Poor Brazil nuts!
Next time I'll add some cashews and macadamias.

Ingredients and Substitutions
In place of matzo in this matzo snack mix, try Saltines.
Seasonings can vary. Garam masala and curry powder are different but if you have one and not the other use what you have.
Don't like either?
Use any of your favorite spice mixes. This one looks nice!
Ranch, taco or even just a combo of garlic powder, onion powder and paprika.
Za'atar or Cajun seasoning would be great, too.
Try to use about 1 T of seasoning and if it contains salt be sure to adjust for the salt.
Yes the Brazil nuts and even the whole almonds sat there until the pecans disappeared.
Next time I'll probably use cashews and macadamias!
I added raisins to this matzo recipe, but other dried fruits would be good also.

How I Make This Easy Snack
Line a large baking sheet with a rim with parchment or a Silpat pad.
Preheat oven!
Beat egg whites until frothy and then add all seasonings except for the melted butter.
Toss the nuts and matzo together and then scrape in the seasoning mixture.
Distribute well by stirring or use your hands. Place in an even layer on baking sheet and bake until the mixture is golden and caramelized stirring occasionally.
Stir in melted butter after removing from oven.

Matzo meal is made with broken matzo pieces. Place in food processor and pulse until a fine texture is achieved. Should look similar to breadcrumbs. We call this matzo meal and you can use it to make matzo balls.
If you grind it finer you will have matzo cake meal.
Matzo is a thin unleavened cracker that must be made and baked within 18 minutes. It symbolizes the bread that didn't have time to rise as the Israelites fled Egypt during the Exodus.
Matzo is eaten during Passover for 8 days because the Torah tells us too,. However we are only obligated to eat it for the two seders.

Matzo Snack Mix

Description
Whether you have leftover matzo or Saltines, this is a fun snack recipe that keeps everyone satisfied.
Ingredients
3 sheets Matzo or 1 sleeve Saltines broken into 1" pieces
2.5 c mixed salted nuts
2 large egg whites
¼ c plus 1 T brown sugar
¼ c sugar
1 T soy sauce
1 T garam masala
1 T kosher salt
1 t fresh ground black pepper
½ t cayenne pepper
2 T melted butter
½ - ¾ c of dried fruit such as raisins or slivered apricots (optional)
Instructions
Preheat oven to 325. Line a large baking sheet with parchment paper or a silpat pad.
In a large bowl combine matzo or Saltines and nuts.
In a medium sized bowl whisk egg whites until frothy. Stir in soy sauce, both sugars and seasonings.
Toss with nut mixture. Spread onto baking sheet and bake until golden and caramelized, about 35-45 minutes.
Remove from oven and toss with melted butter. Let cool and then enjoy!
Notes
Keeps well in a giant zip lock bag or in a sealed container for up to 1 month.
