So for years I’ve been making this Swedish almond cake recipe and I had no idea this delicious cake was Swedish! With just 15 minutes to spare you can have this easy and tasty dessert on the table tonight!

I’ve made this Swedish almond cake recipe for high school auctions and for high school banquets and I can’t even tell you where I found this recipe for the perfect cake!
This gooey cake is baked in a springform pan and is just one simple layer.
My kids love it for its sort of chewy cookie texture.
I love it because with about 15 minutes and just a few simple ingredients you can make a dessert that everyone raves about!
Way back I made this for the blog and called it a sugar cake.
After researching it I found out this is a traditional Scandinavian cake!
Often baked in a special pan called a rehrucken pan, (a Scandinavian almond cake pan), this simple cake appears to have transitioned well to American style.
However I must admit to wanting to try the more traditional method, as I feel the texture of the cake might be a bit differerent.

Why This Swedish Almond Cake Recipe is a Family Favorite
I love easy cake recipes and this is one easy dessert that everyone loves!
In fact, it’s so easy to make you might find yourself making it for family gatherings, a dinner party or a special occasion!
Made with just 7 ingredients, the hands on time to make the cake batter is less than 15 minutes.
And no electric mixer needed. Just a medium bowl!
The top of the cake is covered in powdered sugar and sliced almonds and is so hard to resist!
Ingredients and Suggestions for Swedish Almond Cake Recipe
Sugar
Melted Butter
Eggs
Vanilla Extract and Pure Almond Extract
All Purpose Flour (However feel free to up the almond flavor and use almond flour and make this a gluten free cake. You may need to add a bit more to achieve the same texture. Ground almonds could be mixed in also but I prefer a smooth texture.)
Want this cake to rise a little higher? Add a pinch of baking powder. I do love the chewy brownie texture of this cake though!
Like lemon? I’ve seen this cake made with lemon zest which would make this amazing if served with lemon curd, especially this time of year!
Make This Simple Swedish Almond Cake Recipe
Use a 9″ spring form pan or a 9″ cake pan with a removable bottom.
Spray with non-stick cooking spray or use the butter wrapper to grease the pan.
Melt butter in a medium bowl in the microwave. Cover if you worry about splatters. My microwave allows me to heat the butter on power level seven which softens the butter enough to whisk it until completely melted.
Stir in the sugar and extracts and then whisk in the eggs, one at a time.
Stir in the flour and a pinch of salt and scrape the batter into the prepared pan.
Sprinkle the top of the cake with sliced almonds.
Bake for 35 minutes for a chewy, gooey texture or 40-50 minutes for more of a dense cake texture.
Baking time defintitely depends on the texture you wish to achieve.
The top should be slightly golden brown and is best eaten after it has cooled to room temperature.
Then it’s time to sprinkle with powdered sugar or icing sugar and garnish the center of the cake with a few fresh berries!
How To Serve Swedish Almond Cake
This cake is easily eaten as is. Wedges can be sliced and eaten without a fork, which makes this a very dangerous cake indeed!
I also love this with fresh fruit.
You could easily eat this with a scoop of ice cream, but I love this cake as is!
Perhaps though a cup of coffee alongside this easy cake would make it perfect for a coffee break!

How does a Swedish Almond Cake differ from a Scandinavian Almond Cake?
From what I can tell the names get interchangeably uses but I believe it to be similar except with more of a spongy texture because milk or cream is an added ingredient.
What is the most popular Swedish Cake?
From the results I found it would be a sticky chocolate cake. Sounds fabulous!
What is a Tosca Cake?
Tosca means nuts and there is an almond cake that has a baked nut caramel topping. Sounds great, too!

Description

Ingredients
3/4 c melted butter
1 1/2 c sugar
2 eggs
1 1/2t vanilla
1 t almond extract
1 1/2 c flour
1/2 t salt
Sliced almonds for top of cake
Powdered sugar for garnish
Instructions
Preheat oven to 350 degrees.
Melt butter in bowl in micro.
Stir sugar into melted butter. Whisk in eggs.
Add extracts.
Stir in salt and flour.
Spread batter into 9” round greased pan.
Sprinkle with sliced almonds.
Bake for 30-35 minutes-30 if you like it really gooey.
Bake for 40-45 minutes if you want it more like cake!
After cake has cooled sprinkle on powdered sugar.
Notes
Feel free to try almond flour which makes this a gluten free cake.
Add lemon zest in place of almond extract if you like lemon.
