These easy peanut butter cookies with just 4 ingredients are soft and creamy and taste like peanut butter cookie dough-only better!
Ingredients
2 c peanut butter – creamy or crunchy
2 c sugar – brown or granulated or combination
2 large eggs at room temperature
1 t vanilla
1 t baking soda (optional)
1 c chocolate chips (optional)
Instructions
Preheat oven to 350. Line cookie sheet with parchment paper.
In a medium bowl mix the peanut butter with the sugar until smooth. You may use a hand held mixer if you prefer.
Add eggs, one at a time and the vanilla extract. Stir in baking soda if using.
Roll dough into walnut sized balls or use a cookie scoop. Press the tops of the cookies gently with a fork or the palm of your hand.
Bake for 8 – 10 minutes and remove from oven. Let cool for a few minutes before removing to a wire rack to cool completely.
