Brussels Sprouts Veggie Tots

Every party needs to begin with good appetizers, and these Brussels sprout veggie tots with bacon and cheese are sure to get things rolling!

Veggie Tots with Brussels Sprouts

Brussels sprout tots are veggie tots. They are not tater tots...just so you don't think I'm pulling the wool over your eyes.

Don't get me wrong. I do love tater tots, but every now and then one does need a change.

I love Brussels sprouts even in salad form, but this recipe for veggie tots is even better!

These Brussels sprout tots with crispy bacon and blue cheese crumbles are just the thing to add a new dimension to your party.

Whether it's a family party or a New Year's Eve party doesn't really matter; what matters is how good these little mini morsels are.

Made with crispy bacon, blue cheese and shredded Brussels sprouts these tots are baked in mini muffin pans. No need to fry!

And if you want these without bacon, just use olive oil to cook the Brussels sprouts in.

Easily frozen, these tots can be made ahead and reheated as necessary. My crew loved them!

Veggie Tots with Brussels Sprouts

Serve with a dip or just brush them with maple butter and you have fall flavors all in one bite.

Frankly, Manservant called these stuffing bites and he loved them.

No one is the wiser that its Brussels sprouts  combined with bread crumbs and eggs that help these veggie tots keep their figure!

How do you make veggie tots?

Veggie Tots with Brussels Sprouts this …

It begins by frying bacon. Remove the bacon and add the shredded Brussels sprouts to the bacon grease.

You do like bacon, don't you? Cook those shredded leaves for just a few minutes and place them into a large mixing bowl.

From there it's a matter of stirring in the bacon, some seasonings, blue cheese and eggs, along with some bread crumbs and flour. Yes, there is a reason Manservant thought these were stuffing bites. 

With wet hands and a tablespoon, the tots are formed and placed into mini muffin tins.

Bake until crispy and then brush with maple butter. Bet you can't eat just one!

As a side note: If you do have a few veggie tots left over, they are great chopped up and made into hash. Throw in a few shredded potatoes and you have another great combo!

Every party needs to begin with good appetizers and these Brussels Sprouts veggie tots with Bacon and Cheese are sure to get things rolling!


Ingredients

Units Scale

2 slices bacon

2 c finely shredded Brussels Sprouts (I use a mandolin or the food processor.)

⅔ c Panko crumbs

1 diced shallot or ¼ c minced onion

⅓ c blue cheese crumbled

2 eggs, beaten

1 T flour

¼ t salt

¼ t fresh ground black pepper

½ t poultry seasoning

Topping:

1 T butter

! T maple syrup


Instructions

Preheat oven to 425.

Cook bacon until crispy in a medium skillet. Remove bacon, but leave the bacon grease.

Add shredded Brussels sprouts to skillet. Cook for about 2 minutes and place in a large mixing bowl. Let them cool slightly.

Once they have cooled add the fried bacon, panko crumbs, shallot or onion, blue cheese, eggs, flour and seasonings. Stir it all together.

Using damp hands and a tablespoon form a small round of Brussels sprouts mixture and place in a lightly greased mini muffin pan. You should have close to 24.

Bake for about 18 minutes or until they are golden brown. About 9 minutes in it helps to loosen them from the tin and flip them over. That way they will be all golden like a tot should be!

Meanwhile melt the butter and stir in the maple syrup. When tots are removed from oven, brush with maple butter and serve!

Tots may be frozen and then reheated or refrigerated for up to 24 hours. Reheat at 325 in the muffin tins for about 5 minutes if refrigerated. Frozen will take about 10 -15 minutes.
