Brussels Sprout Tots with Bacon and Cheese

Description

Every party needs to begin with good appetizers and these Brussels Sprouts tots with Bacon and Cheese are sure to get things rolling!


Ingredients

Scale

2 slices bacon

2 c finely shredded Brussels Sprouts (I use a mandolin or the food processor.)

2/3 c Panko crumbs

1 diced shallot or 1/4 c minced onion

1/3 c blue cheese crumbled

2 eggs, beaten

1 T flour

1/4 t salt

1/4 t fresh ground black pepper

1/2 t poultry seasoning

Topping:

1 T butter

! T maple syrup


Instructions

Preheat oven to 425.

Cook bacon until crispy in a medium skillet. Remove bacon, but leave the bacon grease.

Add shredded Brussels sprouts to skillet. Cook for about 2 minutes and place in a large mixing bowl. Let them cool slightly.

Once they have cooled add the fried bacon, panko crumbs, shallot or onion, blue cheese, eggs, flour and seasonings. Stir it all together.

Using damp hands and a tablespoon form a small round of Brussels sprouts mixture and place in a lightly greased mini muffin pan. You should have close to 24.

Bake for about 18 minutes or until they are golden brown. About 9 minutes in it helps to loosen them from the tin and flip them over. That way they will be all golden like a tot should be!

Meanwhile melt the butter and stir in the maple syrup. When tots are removed from oven, brush with maple butter and serve!

Tots may be frozen and then reheated or refrigerated for up to 24 hours. Reheat at 325 in the muffin tins for about 5 minutes if refrigerated. Frozen will take about 10 -15 minutes.
