Strawberry Rhubarb Fruit Galette

When I don’t feel like making pie, a fruit galette is so quick and easy to make. Especially with a store-bought crust!

Manservant has all of a sudden fallen in love with fruit galettes.

Particularly strawberry rhubarb fruit galettes.

It must be that when I sent him to Texas with this strawberry rhubarb quick bread it stole his heart.

He loved it and so did his father.

The other night when we had friends for dinner I gave him the choice of chocolate Texas Sheet Cake or a rhubarb dessert.

I was in shock when he chose rhubarb!

It was just a few years ago that we planted rhubarb and man! it has taken off.

Ours is a green rhubarb plant and it tastes the same as red rhubarb.

Maybe it’s the particular earthy smell that’s a bit like strawberries that makes the kitchen smell so good, but I do believe he is now a rhubarb lover.

So on to this fruit galette recipe that can be made with any fruit.

And for the record they can also be made savory. Think tomatoes or zucchini.

Why I Love Fruit Galettes

Fruit Galettes only need to be baked on a rimmed baking sheet.

No need for a pie tin.

Galettes are baked flat and less fruit is required.

They can be thrown together at a moment’s notice and I think they are just as pretty as pie.

After all, a fruit galette is basically a free form pie.

And the best part is this strawberry rhubarb galette with a store bought crust is so easy to make!

Simple Ingredients For This Fruit Galette Recipe

Pie Crust – use your favorite recipe or use store bought. Follow directions on the package for thawing.

Berries of your choice, chopped or thinly sliced

Pinch of salt

Sugar

Tapioca or corn starch

Pinch of cinnamon

Egg for brushing on crust

Turbinado Sugar for sprinkling on crust

How To Make This Strawberry Rhubarb Fruit Galette

Preheat oven to 400 with rack in middle baking postion.

Chop fruit of choice into thin slices or chop small. Items like blueberries or raspberries can be added as is.

Combine with sugar, pinch of salt, tapioca and 1/2 teaspoon of cinnamon. Cinnamon is totally optional.

Roll out crust on a parchment lined rimmed baking sheet.

Top with fruit filling and any juices, leaving about a 2 to 3″ border. Fold the border over the fruit, pleating as you go, with the center open.

Brush crust with 1 egg beaten with 1t of water and sprinkle with coarse sugar.

Bake for about 35 minutes or until fruit is bubbling and juicy. Mine actually took a bit longer because the strawberries were cold.

Cool on a wire rack and serve warm or at room temp.

This is perfect for 4-6 people and can be kept overnight on the counter and up to a week in the fridge.

LOL! This rhubarb galette will not last that long, I promise!

Keep in mind that the sourness of the rhubarb balances out the sweetness of the strawberries.

If you use more strawberries than rhubarb you may want to decrease the sugar.

What to Serve with this Strawberry Rhubarb Fruit Galette?

You can definitely eat this strawberry rhubarb galette a la mode style with ice cream.

Whipped cream or even a cheesy blob of macarpone would be delish.

And I always have this galette recipe with a glass of milk!

A sweet wines like a Sauternes or a Pinot Noir Rose would be a great sipper with this simple dessert.

Description

A fruit galette can be made with all kinds of fruit. This one with strawberries abd rhubarb form my garden is not only delicious, it is so simple and quick to make.


Ingredients

Units Scale

1 pie crust of your choice

3.5 to 4 cups of sliced rhubarb and strawberries (I used about 2/3 of rhubarb to 1/3 of strawberries)

Pinch of salt

1/4 c sugar

1 1/2 T of tapioca or cornstarch

1/2 t cinnamon-optional

1 egg

Turbinado sugar


Instructions

Preheat oven to 400.

Combine fruit, salt, sugar and starch in a medium bowl. Stir in cinnamon if you are using.

Roll out crust onto a parchment lined rimmed baking sheet.

Place fruit filling in the middle and leave about a 2.5″ border.

Pleat crust over fruit filling and then brush with 1 egg that has been beaten with 1 t of water.

Sprinkle with turbinado or any coarse sugar.

Bake in oven for 30 to 45 minutes until the filling is bubbly and and juicy.

Cool on a wire rack for 20 minutes before serving.
