Easy Oven Roasted Green Beans

Oven roasted green beans are almost better than French fries. They are salty and crispy and make a perfect side dish or snack. And they only take about 20 minutes to make!

I've been making roasted green beans ever since I spotted the recipe in the first Silver Palate cookbook many, many years ago.

That recipe included other veggies including zucchini, eggplants and potatoes.

Because different vegetables cook at different rates, I think it's easier to cook one vegetable at a time.

I Love This Recipe!

Personally I do like steamed veggies, however I love roasted veggies more.

In general veggies that are roasted have much better flavor, I feel.

I do make this steamed green bean salad that I enjoy though!

Blistered green beans are similar to these roasted green beans, but this recipe is much simpler.

Many people have never roasted green beans and are surprised they taste so good.

I think I've converted many a green bean hater with this green bean recipe.

Salty and crispy, these green beans are really addicting.

I hope for leftovers so I can munch them, as I wish I could do with potato chips all day long!

Questions on Roasting?

Can green beans be roasted?

Green beans are easily roasted. This recipe brings out the best in green beans, in my opinion, because the beans become crispy and caramelized. However by baking them less, you will end up with beans that more closely resemble a steamed green bean, however they will have more flavor.

What is the difference between roasting and baking?

Baking starts with a lack of structure-think batters or dough and roasting starts with a solid texture-like veggies or meat. Baking transforms doughs into a solid structure whereas roasting adds browning and texture. Roasting is also done at a higher temperature which can lead to dryness, hence the addition of oil.

Just 3 Essential Ingredients Needed

Green beans in the oven are made with green beans, oil and salt!

Of course you can add a sprinkle of Parmesan cheese or a dash of lemon juice after they have come out of the oven.

And the oil you choose is critical. Choose a good olive oil or one flavored with garlic or lemon.

You could even stir in some sliced garlic halfway through cooking.

Next time I might even try roasting them in chili oil or chili crisp.

Don't forget the coarse salt. Salt adds so much flavor and brings out the flavor of the green beans also.

In case you are wondering, I roast the green beans directly on the baking sheet as I find they caramelize better than on a sheet pan lined with parchment.

Important Tip: Do not crowd the pan or your green beans will steam and not roast!

What to Serve with Roasted Green Beans

This roast green beans recipe goes with most anything.

Chicken, fish or beef. Or even instead of potato chips with a sandwich.

They are great as munchies if you need an appetizer.

Serve roasted green beans at room temperature if you don't serve them straight from the oven.

Just make sure to crisp them back up if you kept them to long at room temp.

They will keep roasted in a sealed container about three days in the fridge.

Crisp them again by throwing them into the air fryer for just a few minutes.

Though pinto beans are the most popular bean in the USA, green beans are also very good for you.

They are great for bone health, help with inflammation and are usually reasonably priced at the grocery store.

Plus, they are mild flavored, and can be prepared so many ways.

I urge you to try this simple and delicious recipe for oven roasted green beans.

Description

Oven roasted green beans are almost better than French fries. They are salty and crispy and make a perfect side dish or snack. And they only take about 20 minutes to make!


Ingredients

Scale

1 lb fresh green beans - washed and dried

1 T olive oil or your choice

¾ t coarse salt


Instructions

Preheat oven to 400.

Wash and dry green beans. I place them on a paper towel and then use another paper towel to blot up any moisture.

Pour 1 T oil onto a baking sheet. Toss green beans in the oil and spread them in a single layer. Sprinkle with salt. It is hard to oversalt these.

Place in oven and roast for 15 to 20 minutes or until they start to shrivel and turn golden. These usually brown on the bottom first so give them a stir during baking to make sure they are not burning on the bottom. Personally I like these quite crisp so I tend to let them go a bit longer, but carefully watch so they don't burn. Green beans crisp up after removing from oven.


Notes

If you don't want these roasted until golden and crispy, just decrease the baking time until they reach your desired doneness.

Feel free to garnish with sliced almonds, Parmesan or lemon. Personally, I prefer them golden, crispy and salty!
