I am a sucker for a cheesy party dip. This one with chile jack cheese and pepper jam is served warm with tortilla chips. It disappeared fast. Just sayin’!
When it comes to parties, this cheesy party dip is a crowd pleaser. And if there is no party this year, I can almost guarantee that this cheese dip will still disappear.
My brother-in-law and Manservant were just two and they didn’t stop until there were maybe a few spoonfuls left.
Using an amazing chile jack cheese may have been the secret to this creamy rich dip that happened to melt so perfectly.
Combining the cheese with mayo and cream cheese always guarantees a good dip, but the flavors of scallions, green chiles and pepper jam really put this over the top.
No more dumping pepper jam over a brick of cream cheese! Instead you can bet I’ll be warming it with the cheese instead!
Simple to make, if you are looking for cheese dip recipes, this one is a keeper.
Manservant exclaimed several times how good it was!
What is A2 Milk?
Yes, I had read about this special cheese with A2 milk being made in Colorado from pretty Guernsey cows.
Don’t know what A2 milk is? Well, I didn’t either until I tried some free samples from Haystack Mountain and Origin Milk .
Apparently the wonderful milk of these somewhat rare cows is perfect for those who are lactose intolerant. 60 to 85% of folks who are lactose intolerant have no problems with Guernsey milk.
Golden in color and rich and buttery, the cheese samples I tried were impressive. Though only produced in Colorado, Pennsylvania and Ohio, this milk and cheese is worth asking about!
So after learning something new and also the fact that Super Bowl was upon us, I decided to put this amazing cheese to work in this udderly amazing dip. (Get it?)
What cheese is best for melting?
Just beat some room temperature cream cheese with the mayo and chile jack. Even if you don’t have access to Origin chile Jack, any great melting cheese will work.
Think cheddar, Monterey jack, Muenster, Fontina, gouda. They are all good melting cheeses. Mozzarella is also, but I like a bit more flavor from the cheese, when it comes to dip.
And that pepper jam? I just tried a bacon hot pepper jam/jelly from Kroger that was quite good, but regular spicy pepper jam is perfect!
There is a difference between spicy and just red pepper jelly. I prefer the spicy sweet version, but use what you like.
Want your dip creamier? Just stir in more mayo or even some sour cream, but we loved spooning our dip on to each chip. Lime tortilla chips were our fave, but this is totally a preference thing!
Now let’s get to it, shall we? But first…can anyone tell me who’s playing?

Description
This awesome cheesy part dip with pepper jelly and green chiles always is devoured!
Ingredients
1/2 c mayonnaise
4 oz cream cheese
2 c Monterey Jack chile cheese or see above for other suggestions (Reserve 1/3 c for top of dip.)
4 scallions
4 T hot pepper jelly or more if you prefer
1 can drained green chiles
Crushed lime tortilla chips for top of dip and more for serving
Instructions
Preheat oven to 350. Allow cream cheese to soften to room temperature for easier beating.
Using an immersion blender in a medium sized bowl or a 4 c measuring cup, blend the cream cheese, mayonnaise, and grated cheese.
Stir in minced scallions.
Spoon into an 8″ baking dish and spread to the edges. I used an oval baking dish 1 quart baking this but this is your preference.
Top with the pepper jelly and spread to edges.
Top with green chiles and spread over top of jelly layer.
Sprinkle with reserved cheese and top with crushed tortilla chips.
Bake for about 15 minutes or until bubbling.
Serve with sturdy chips and a spoon!

I think I have some pepper jam. This would make a great dinner as far as I am concerned . What a great idea for a dip, I love it.
