Emeril’s Smashed Potato Salad

Emeril’s smashed potato salad is tangy and peppery, goes great with brisket or ham, and just about everything else you can think to serve it with.

Potato salad is at the top of my list when it comes to a great side dish.

I’ve made quite a few and all of them are my favorites.

Emerils smashed potato salad is one that Manservant heartily recommends and one I know I will make him again.

Peppery with hot sauce and ground black pepper, this is one potato salad that is not for the meek. I say that, but truthfully the pepper can be adjusted to whatever spiciness you prefer.

Dijon mustard is a big flavor component in this potato salad as mustard is in many potato salads.

Dijon mustard is critical for balancing out the bold flavors. Fresh garlic is also used and trust me when I say Emeril knows what he’s doing.

The best thing about this potato salad? It gets better as it ages. I don’t mean age it for days, but leftovers taste really good the next day. IF YOU HAVE ANY!

Make sure not to over cook your potatoes.

Mushy means the potato salad will not have the right texture and I think texture is really important in potato salad.

That being said…this is a smashed potato salad and chunks are OK.

You know what you like so make it to your own specifications.

And this is where I’m going to tell you that any recipe I make I treat as a guide. If you like a certain flavor such as garlic, don’t be afraid to add a bit more.

Hot sauce? Leave it out if you don’t love spicy.

The dressing for these smashed potatoes would also make a great hearty salad dressing!

It’s not quite a Caesar dressing but has many of the same components.

Just mix up the mustardy dressing and if you want to thin it out, don’t be afraid to mix in a few tablespoons of water. Don’t do that for the potato salad though!

Serving ham for Easter? This smashed potato salad would be a tasty side dish.

It would also go great with turkey. And man…Emeril’s smashed potato salad would be really good with brisket or burgers, but it’s not quite summertime yet!

Description

Emeril’s smashed potato salad is tangy and peppery, goes great with brisket or ham, and just about everything else you can think to serve it with.


Ingredients

Units Scale

2 lbs new potatoes, scrubbed and cut into 1/2″ pieces

2 t salt

1/2 c minced onion

3 hard boiled eggs, chopped

1 t minced garlic

1/2 c to 3/4 c mayonnaise

1/4 c Dijon mayonnaise

2 T fresh lemon juice

1 T brown sugar

1/2 t red pepper sauce

1/2 t Worcestershire sauce

1 t fresh ground pepper


Instructions

Place potatoes in a large saucepan and add enough water to cover. Add 1 t of the salt. Bring to a boil over high heat. Reduce the heat to medium low and simmer until fork tender, about 10 minutes. Drain.

Mash the potatoes in a large mixing bowl with a large fork. They should be lumpy. Mix in the onions, and eggs.

In a large measuring cup or small bowl, mix garlic, 1/2 c of the mayonnaise, mustard, lemon juice, and brown sugar stirring well to dissolve the sugar. Season with pepper sauce, Worcestershire, the remaining 1 t salt and the pepper. Taste for seasoning and add more hot sauce if desired. Stir into potato mixture. Add more mayonnaise if desired.

Serve at room temperature or chilled. Both taste great.

While I always add mustard to my potato salad, I've never thought to add Worcestershire sauce or red pepper sauce. Thank you for sharing this great sounding salad.

this reminds me of japanese potato salad where you mash the potatoes. and also of a Dutch salad that i've been making for centuries which has mashed potato and boiled eggs and shredded lettuce etc etc folded thru it. very yummy, as i'm sure this one is too. happy easter. cheers sherry
