Healthy Baked Oatmeal with Strawberries

 I love starting the day with oatmeal. This  healthy baked oatmeal is so luscious topped with a spoonful of strawberry jam. You will love it!

Need a recipe for baked oatmeal? I have several and I love them all.

Not only are they all full of flavor but they really hit the spot when it comes to filling.

Loaded with lots of fiber and nuts, each can be easily adapted to your own tastes.

Baked Strawberry Oatmeal

My latest version is perfect for Spring. Topped with slivered almonds and strawberry jam, this oatmeal made Manservant very happy. And me, too!

It kept for a week in the fridge and when I needed a bowl I merely placed a few spoonfuls in the microwave, Yes, this is easily reheated.

This recipe for baked oatmeal is great topped with yogurt if you want some additional protein or add just a dollop of heavy cream or half and half to gild the lily.

Baked Oatmeal with Strawberries

Breakfast is a hard meal for me during the week. Weekends I don’t mind spending time and cooking, but on a weekday I just prefer to get the day started.

Generally that means MAYBE a banana with a side of yogurt or possibly a piece of toast with cheese.

So having this healthy baked oatmeal in the fridge is very healthy for moi!

Easily made in a blender, food processor or possibly an immersion blender, baked oatmeal quickly evolves more into a breakfast cake!

Yes, making oats into oat flour turns breakfast almost into dessert and if you are like me, that is a great way to start my day.

It surely beats grabbing the nearest cookie!

Now I didn’t try grinding the oats for this recipe, but all it does is change the texture. Have kids that don’t like oats as is? I bet they will love the newest latest and greatest!

Either way, this creamy, nutty oatmeal is a great way to start the day.

Topped with a spoonful of jam, this oatmeal is sure to please!

Description

Baked Strawberry oatmeal is healthy and delicious! Can’t beat that!


Ingredients

Scale

1 c oats (Ground is your choice)

1/2 c chopped pecans

3 T brown sugar

1/2 c apple butter or apple sauce

2 t vanilla

1 1/4 c milk of your choice

1 egg

1 mashed banana

1/2 c raisins, dried strawberries, blueberries or cherries or dried fruit of your choice

Slivered almonds

Handful of dehydrated strawberries

Handful of sweetened shredded coconut

Spoonfuls of Strawberry Jam


Instructions

Preheat oven to 350.

Combine pecans, brown sugar, and oats in a bowl.

In a large mixing cup combine applesauce or apple butter, vanilla, milk and an egg. Beat well.

Grease an 8 or 9″ baking pan and pour in oat mixture. Now mix in applesauce and milk mixture and stir well.

Top with slivered almonds, coconut and a few dehydrated strawberries that you tuck in.

Bake for 30 minutes at 350.

Remove from oven and stir in a few spoonfuls of strawberry jam. So good!


Notes

Recipe is easily adapted to the fruits and milk that you prefer.
