I’ve never been to Korea. I’ve never actually had a desire to go to Korea though Alex OdieSan ChinaBoy goes there almost every week.

He says it is for business. But I think it is for this. THIS! This corn cheese with bacon and miso.

He has been holding out on me. His last trip home he introduced us to Army Soup and Korean fried chicken and Soju bombs but somehow he missed telling us about this.

This savory concoction that with each forkful has one already dipping again, before swallowing the first forkful.

This is an every man for himself kind of food, because it disappears fast.

How can Alex OdieSan ChinaBoy not know that  corn is my favorite vegetable and bacon my favorite everything? And cheese?

Well, let’s not even talk about cheese. Cheese belongs everywhere.

How on earth in the land of gochujang and kimchi and Kias did no one tell me about corn cheese?

Of course there are lots of dips out there that have these ingredients, but they just aren’t Korean corn cheese.

They have Tex Mex overtones and chilies and peppers and a slew of things but I think the magic about Korean corn cheese is in its simplicity.

Full of umami, with savory saltiness, Korean corn cheese is the perfect food to accompany beer.

Or maybe it’s the other way around. Perhaps it’s the beer that needs the corn cheese.

In any case the two go together like Margaritas and salsa.

Korea has quite a drinking culture. In fact it even has a page on Wikipedia describing it.

There are many traditions associated with how one serves a drink and what one eats while drinking certain things such as beer or soju.

I am not an expert, however I do think that beer and corn cheese are the perfect couple.

And while I’m eating corn cheese let’s just say that corn cheese and me are the perfect couple. Do not get in the way of my fork!

That’s the other thing. Corn cheese is served with a fork.

It isn’t served with chips or Fritos or tortilla chips. It is served with a fork; but eat it however you like.

Manservant ate it with pita chips…how uncouth. And dare I tell you about the Louisiana hot sauce that he smothered it with.

Corn cheese is like an artist’s palette. Paint it however you must. While you are painting, I am pondering how it is that mozzarella made it to Korea. 

I do know that in China corn on the cob is sold on the street. But not mozzarella so I’m still not sure about this cheese thing!

And yes I know that Korea and China are two different countries!

I got my recipe from Lucky Peach so it’s David Chang I have to thank for this new addiction.

His corn cheese recipe is a bit different than most  recipes I’ve seen. It has miso which gives an extra added punch.

And it has bacon. Which means more umami. And last but not least it requires a fork.

Which means this stuff disappears fast. Get ready to dive in! It’s summer!

Ingredients

Scale

4 oz bacon chopped (about 3/4 c or 4 thick slices)

2 T butter

1 lb frozen corn kernels (I bought the fire roasted corn at Trader Joe’s)

4 oz cream cheese

1 T white miso

2 T mayonnaise

1 c shredded mozzarella cheese (the prepackaged shredded cheap kind)

Scallions and hot sauce for garnish


Instructions

Heat oven to 450.

Place bacon in a cold cast iron skillet over medium heat. Cook, stirring often, until bacon is crispy-about 10 minutes.

Pour off most of the bacon grease and save it for your dog’s food. Add butter to skillet. When it sizzles add the corn and toss to coat. Cook for 2-3 minutes to heat the corn. Add the cream cheese and miso and use the back of the spoon to smush it all until it melts and blends with the corn. Stir in the mayo and toss until the mixture is creamy and smooth.

Spoon corn into a baking dish or leave it in the cast iron skillet as long as it is not too big. Corn mixture should be shallow. Not more than a 1″ layer. Sprinkle with mozzarella and bake until brown and bubbly-about 5-7 minutes.

Serve with forks and hot sauce. Sprinkle with scallions if desired. Have lots of cold beer to go with!

A bit over-the-top -- but you did get the recipe from David Chang so why am I not surprised! That would hit all the high notes for human cravings -- fat, sweetness (corn!), sharpness. And umami too.
