This blueberry baked oatmeal with applesauce and nuts is one great way to start your day.

1 c chopped nuts (Mix and match your favorites and toast for extra flavor)

1/2 c oats

3/4 c applesauce (I used cinnamon)

2 T maple Syrup, agave, honey, brown sugar, or your favorite

2 t vanilla

1/8 t salt

1/2 t cinnamon if you like

1 1/4 c milk (your favorite be it real, almond, soy, coconut, etc)

1 c fruit (dried, frozen or fresh-I used 1/2 c frozen blueberries
and 1 banana)

Preheat oven to 350.

Mix all ingredients in a bowl.

Spread in a greased dish.

Bake for about 45 minutes.

Pour more milk over top if you want. Eat and enjoy.

Oatmeal can be reheated the next day and it can also be eaten cold.
