Description

A Falafel Brunch sandwich is the perfect way to start your day. Filled with all good things, you’ll be feeling healthy all day!


Ingredients

Scale

1 package Trader Joe’s Falafel Mix or your favorite kind

Tomato/Cucumber Salad

Hummus

One Fried Egg per person

Garnishes: Harissa, Pickles, Olives, Za’atar, Pickled Jalapenos


Instructions

Make your falafel mix according to package instructions. Heat waffle iron and spray well with nonstick cooking spray. Cook for about 3 minutes or until falafel waffle is not sticking to grate. Keep warm.

Make tomato salad. Add 1/2 of one medium cucumber quartered to tomato salad. You can use basil or leave out and stir in 1/2 t za’atar. Let sit at room temperature until ready to use.

On each plate spread a few spoonfuls of hummus.

Fry an egg per person.

Assemble by placing one falafel waffle on plate. Top with a few spoonfuls of tomato cucumber salad. Top with another waffle. Top that with the fried egg. Drizzle with harissa or sriracha. Garnish with olives and pickles and a few jalapenos if you have them. Sprinkle with more za’atar if you’d like.


Notes

See notes above. Feel free to substitute your favorite hummus. You could even buy the tomato cucumber salad from the grocery deli and doctor it up!
