Two great appetizers for a hot summer day!
Ingredients
1 1/2 c roasted red peppers
2 t lemon oil (or use olive oil and 1 t lemon juice)
1 T herbs d’ provence (savory, fennel, basil, thyme and lavender)
1T good balsamic vinegar
1/2 t coarse salt
Rosemary Balsamic White Beans
1 can white beans, drained and rinsed
2 T balsamic vinegar
1 T olive oil
1/2 t coarse salt
1/2 t ground black pepper
1/4 t dried red chili flakes
2 t rosemary
2 T chopped Italian parsley
2 T finely chopped onion
Instructions
Red Peppers:
Combine and let everything marinate at room temperature for about an hour. Serve on crostini with goat cheese.
White Beans:
Stir all together and let marinate at room temperature for about an hour. See serving suggestions above.
