Tater Tot Waffle Breakfast Sandwich Recipe

Description

This tater tot open faced waffle is the base for crisp bacon, fried eggs and topped with a queso cheese sauce. And yeah! Don’t forget the pickled jalapenos on top!


Ingredients

15 defrosted tater tots per waffle* (This depends on your waffle machine.)

2 slices of bacon per sandwich fried crisp* or slices of ham would work too!

1 or 2 fried eggs per sandwich

Cheese sauce – queso or otherwise (I stirred some pickled jalapeno juice into the cheese sauce to give it some extra flavor. Heated per instructions. I use about 2 T drizzled on top!

Instructions

Defrost tater tots. Heat waffle iron and place the tater tots in waffle iron. Each waffle iron is different but in mine it takes 2 – 3 minutes to cook them until crisp.

Fry bacon while tots are cooking. Use your preferred method or check out my microwave method below.

Fry eggs. If you fry your bacon in a pan then use the bacon grease to fry your eggs.

Heat up queso as per directions on container.

Assemble by placing bacon on tater tot waffle, top with bacon or ham, top with fried egg. Drizzle with cheese sauce and top with pickled jalapenos.


Notes

*To defrost the tater tots I place the bag of frozen tots in the microwave on power level 4, for about three minutes. Then I take out what I need and refreeze the rest. If the tots haven’t thawed enough, place them back in the microwave and on the power level 4 setting, cook them for about 1 :30 seconds until they are thawed enough to put in the waffle iron.

* I also cook the bacon in the microwave. Place bacon slices on a paper plate which is placed on a dinner plate. Cover with a paper towel. Cook for up to 5 minutes depending on the thickness of the bacon. We like thick! I always drain off the grease and pour it into a can to use for cooking.
