Description
Strawberry Cookies use three types of strawberries, white chocolate and cacao nibs. So easy to make and so perfect for Spring; these strawberry cookies are love at first bite!
Ingredients
2 sticks melted, unsalted butter
2 1/3 c all-purpose unbleached flour
1 t salt
1/2 t baking soda
1/4 c dry milk powder
1/4 c sugar
1 c packed dark brown sugar
2 lg eggs
1 t vanilla extract
1/4 c strawberry preserves
8 – 11 ounces white chocolate chips
4 ounces dried strawberries (look in the dried fruit section)
1/4 c cocoa nibs
Streusel: (Optional)
2 T cold butter, diced
1/8 c sugar
1/3 c all-purpose flour
1/4 c ground, freeze-dried strawberries
Instructions
Mix the streusel ingredients in a small bowl or mixing cup until crumbly. (I usually use a fork.)
Line baking sheets with parchment paper.
Mis together flour, salt, baking soda and milk powder in a large measuring cup.
In a stand mixer, cream together the butter and the sugars.
Add eggs, vanilla and strawberry preserves. Add dry ingredients, slowly, scraping down sides of bowl. Stir in dried strawberries, white chocolate chips and cocoa nibs.
Using a 1 T cookie scoop, place cookie dough on prepared cookie sheets. Sprinkle with streusel. Place in freezer for about 10 minutes, while your oven preheats.
Preheat oven to 350.
Bake 7 minutes. Rotate pan and then bake another 6 -8 minutes.
Cool on rack and then enjoy!
Notes
See post above. Cacao nibs are optional. Cookies can also be made without streusel.
