Soft Sugar Cookies

Ingredients

Scale

1 c unsalted butter, melted and cooled

1 1/4 c sugar

1/4 c packed brown sugar

2 t vanilla extract

1 egg plus 1 egg yolk

Decorator’s Sugar

1 1/2 c cake flour

1 1/2 c all purpose flour

3/4 t kosher salt

1/2 t baking soda


Instructions

Using a stand mixer, mix together melted butter and sugars on medium low speed until the mixture comes together. Mix in egg, egg yolk and vanilla.

Mix the dry ingredients in a bowl or four cup measuring cup. Add to the butter mixture but do not overmix, especially if you want a chewy cookie.

Shape your dough into 34 golf balls and roll in your favorite sugar. Place on a lined baking sheet and place in freezer until rock hard.

When they are ready to bake, preheat oven to 375. Place 12 cookie balls per sheet about 1 1/2″inches apart. Bake for 10-12 minutes or until the bottoms are light golden. The cookies should still look pale but be nice and puffy. Remove from oven and let cool.

Once they are room temperature, you should have the right consistency, which should taste like a chewy, soft sugar cookie.
