Description
Peanut Butter Chocolate Chip Cookies are not your traditional peanut butter cookie. They aren’t sandy and crispy, but chewy and soft. They are loaded with peanut butter! Oatmeal gives this cookie texture and the chocolate sweetness. This isn’t an overly sweet or rich cookie, but just right. Perfect packing for picnics and perfect with a tall glass of milk!
Ingredients
1/3 c maple sugar
1/3 c plus 2 T dark brown sugar
1 stick softened butter
1/2 c peanut butter with nuts (I used natural, but well mixed)
1 t vanilla
1 T maple syrup
1 egg
1 c unbleached flour
1/2 c oats
1 t baking soda
1/4 t salt
1 c dark chocolate chips
Instructions
Beat sugars, butter, peanut butter, vanilla, maple syrup and egg, until creamy and well blended. This may take a few minutes.
Mix in flour, oats, baking soda and salt. Stir in chocolate chips. Form into a ball and wrap in plastic wrap.
Chill overnight. (This allows the oats to absorb all the great flavors and also soften a bit.)
When ready to bake, preheat oven to 350. Form into 1 T balls and place on a Silpat or parchment lined cookie sheet about 2″ apart. Bake for about 10 minutes. They may still look a touch underdone. Cool and enjoy.

These do need to chill overnight!
