Kale Salad with Cherries, Almonds and Feta

Description

This simple kale salad is the perfect summer kale salad! Made with fresh cherries and an easy kale dressing, this salad can be made as a side dish or top with chicken or shrimp or grilled fish for a hearty meal.


Ingredients

Units Scale

1 T balsamic vinegar

1 T raspberry vinegar

1 1/2 t honey

3 T olive oil

Salt and fresh pepper to taste

1/2 t rosemary or mint

2 finely chopped green onions

10 pitted and sliced fresh cherries

1/4 c cubed or crumbled feta cheese

1/4 c sliced or chopped almonds

4 c baby kale


Instructions

Make Vinaigrette:

In a small measuring cup, whisk together both vinegars, mustard and honey.

Whisk in olive oil and season with salt and pepper.

Assemble salad ingredients in a bowl.

Toss salad with about 2 T of dressing to start. Add more if you like it heavy with dressing.


Notes

Crumbled goat cheese or Boursin cheese is a great substitute for feta.

Sliced fresh apples, grapes, apricots, raspberries, etc. will also work in place of cherries.

Sherry vinegar is a great vinegar to try also, but you may need to add more honey because it tends to be tart.
