Description

This easy scones recipe is made with cranberries or cherries, chocolate and whipped cream. Kind of like a sundae in a scone form!


Ingredients

Scale

2 c all purpose unbleached flour

1/4 c granulated sugar

1 T baking powder

1/2 t kosher salt

3/4 c heavy whipping cream, chilled and lightly whipped to the consistency of pancake batter

1/2 c salted butter, cut into 1/2” cubes and chilled

3 ounces bittersweet chocolate, chopped

1/2 c dried tart cherries

Sparkling sugar for sprinkling


Instructions

Heat oven to 400 degrees. Line baking sheet with parchment paper.

Whisk flour, sugar, baking powder and salt in a large bowl.

Toss the butter cubes in the flour mixture to coat, then press the cubes flat using your fingers. Add the chocolate and dried fruit of your choice and toss until well coated.

Add the whipped cream and rake through the dry ingredients with fingers spread wide on one hand while rotating the bowl with the other. Keep mixing, scraping clumps off your hand as needed until all the dry bits are moist and have formed large, shaggy clumps.

Gather small handfuls of the dough, about 1/4 c each and gently roll into 12 balls. Place on prepared baking sheet, about 2″ apart.

Sprinkle with sugar and bake for about 20 minutes, until golden brown. Transfer baking sheet to a wire rack and let cool, about 5 minutes. Serve warm or at room temperature.
