Description

Brown sugar toffee bars are chewy and dense and topped with chocolate ganache and toffee bits. These toffee bars aren’t candy like like real English toffee, however they are just as addictive.


Ingredients

Units Scale

4 sticks butter

2 c brown sugar

2 t vanilla

2 eggs

4 c flour

3/4 t salt

Ganache

1 c heavy cream

1 c chocolate chips or more if you want a thicker icing

Topping

1 bag Heath bar Toffee bits or Skor

Sea Salt for sprinkling


Instructions

Grease a 12 x 17″ sheet pan. Preheat oven to 350.

Cream butter and brown sugar in stand mixer until light.

Add vanilla and eggs and beat in.

Add flour and salt and mix well. (You may want to cover your mixer with a towel to prevent flour from flying everywhere.)

Press dough into your baking pan. I use a spatula to help spread dough and tamp it down.

Bake for 15 minutes or until light golden. I prefer a fudgy texture but if you want them crispier, bake them longer.

While bars are baking, make the ganache. Pour heavy cream into a 2 c measuring cup. In the microwave bring cream to a simmer. In my microwave, this takes about 1 minute to a minute and a half. Pour hot, but not boiling cream over chocolate. Let sit for about a minute until chocolate softens. Using a whisk, beat chocolate and cream until is is glossy and smooth.

After bars are removed from oven, pour ganache over bars and spread with a spatula. Let cool just a bit and then top with toffee bits. Sprinkle with sea salt if desired. Chill and then cut into bars.
