Banana Granola Toasting Bread

Description

This simple banana bread recipe is totally delicious on its own. Add in some granola, banana chips, chocolate chips or coconut if you want. Either way this is good!


Ingredients

Units Scale

1 c brown sugar
2 eggs
3/4 c coconut oil or vegetable oil
1/2 c Greek yogurt
1 t vanilla
1 c mashed bananas ( A little more, a little less, doesn’t hurt anything)
1/2 c chopped walnuts
1 t baking powder
1 t baking soda
2 c flour
1 c of your favorite granola (or use mine which you should make at least once) (optional)
1/2 c banana chips (sold with the dried fruit) (optional)


Instructions

Preheat oven to 375. Grease your pans.

Mix together sugar, eggs and oil. Add yogurt and vanilla. Add bananas and walnuts.

Combine flour with baking powder and baking soda. (This distributes the leavening agents better.) Stir into banana mixture.

Last, but not least, stir in the granola and banana chips if using.

Bake for 45 minutes. Let cool on a rack. Slice and toast-or just eat. But make sure to enjoy!

Notes

Makes 1 8 x 4 loaf and 1 4 x 7 loaf.

One could stir in coconut flakes or chocolate chips, too!
