Asian Noodle Soup with Ground Pork and Peanuts

Description

This simple and satisfying Asian noodle soup is great when you need a quick meal on a chilly night!


Ingredients

Units Scale

2 t peanut or canola oil

1/2 lb ground pork or your choice of ground meat

1/4 c finely chopped sour pickles or pickled mustard greens

Peanut sauce:

3 T peanut butter

3 T soy sauce or fish sauce

3 T roasted sesame oil

3 T sugar

2 T rice vinegar

1 t red chile flakes or to taste

Soup:

6 c chicken broth or 4 c chicken broth with 1 can of coconut milk

8 oz fettucine, rice noodles or pappardelle or rice noodles (Depending on your choice of noodles, they may need to be cooked first. I cooked the pappardelle al dente, before adding to soup.) If you have fresh noodles there is no need to cook first. Just add them to soup.

1 bunch scallions, finely chopped

1/4 c finely chopped roasted and salted peanuts

Toasted sesame seeds for garnish (optional)


Instructions

In a 6 quart pot, add oil and ground meat. Stir over high heat until meat is crumbled and lightly browned, about 5 minutes.

Mix pickles and peanut sauce with meat. Add broth and cover pot.

If using fresh noodles, add them now and cook for about 3 minutes until pasta is just tender.

Stir in scallions and serve! Top with toasted sesame seeds if desired.
